Will I lose the raw editing latitude?

The JPG has far less latitude than the DNG, which is inherent to the format. Your DNG files are untouched, so nothing is actually lost — the JPG is an additional copy, not a replacement.

Does this work with drone photos?

Yes. DJI and most other drone makers write DNG for their raw stills.
